Saffire Freycinet curves above Great Oyster Bay at the gateway to Freycinet National Park, twenty suites of Tasmanian timber facing the Hazards mountains on the island's east coast. Reached by a scenic drive of around two and a half hours from Hobart Airport, or two from Launceston, with a private Saffire lounge at Hobart Airport, it is an intimate coastal sanctuary built on its signature experiences. The suites span three categories — the 80-square-metre Luxury Suite, the 96-square-metre Signature Suite with a bathroom over the water, and the 140-square-metre Private Pavilion with a private plunge pool and in-suite chef facility; there is no communal pool, with plunge pools reserved to the Pavilions. The stay is all-inclusive, and the experiences are the heart of it: donning waders to eat oysters at a table set in Great Oyster Bay, meeting Tasmanian devils at Saffire's own one-hectare conservation habitat, walking to the Wineglass Bay lookout, cruising to Schouten Island aboard the vessel Saffire, beekeeping and a Waubs Harbour distillery tour. Palate, the guests-only restaurant, builds multi-course degustation and a-la-carte menus on Tasmanian produce — Great Oyster Bay oysters, north-west lamb, Latrobe chocolate and on-site honey — and ranks among Australia's most exclusive dining rooms.
